ON THE ROAD RECIPES - Using a packet of French Onion Soup

Classic and versatile FRENCH ONION SOUP Packet Mix
This soup mix is a must, wether it is in the kitchen cupboard, or in the camp kitchen kit, there should always be a packet on hand.
There wouldn't be a cook who hasn't tried and continues to make the classic 'Chicken in Apricot Nectar' casserole, using a tin of apricot nectar and a packet of French Onion soup mix. It is yummy and still a great dish, 30 years on!
But there are lots of other recipes you can make using a packet of French Onion Soup mix as the base ingredient, and below are just a few for you to try for some easy and delicious meals when you are camping next.

Braised Lamb Chops, Tomatoes & Onions
Serves 4
6 to 8 lamb chops - trimmed of excess fat
1 tblspn oil
2 onions - sliced
1 x med can chopped tomatoes
1 x pkt French Onion Soup mix
1 tspn Worcestershire Sauce
salt, pepper
1/3 to 1/2 cup stock or water
Heat the oil in a pan or camp oven and brown the chops on each side. Remove and drain on some absorbent paper.
Add the onions to the pan and sauté until soft.
Add the remaining ingredients.
Season to taste.
Return the chops to the pan, cover and simmer gently for approx 1 1/2 hours, or until the chops are tender.
Note: Keep an eye on the liquid, you may need a little extra stock or water.

Creamy Potato Bake
This is very tasty!
4 medium potatoes - peeled and sliced reasonably thinly
1 pkt of French Onion Soup mix
300 ml cream
Grated cheese
salt, pepper
Place the potato slices into a greased ovenproof dish or your camp oven.
Combine the soup mix with the cream and pour over the potatoes. Season with salt & pepper to taste.
Top with as much or as little cheese as you like.
Cover and bake in a mod-hot oven (200(C) for approx 45 mins, or until the potatoes are cooked and the cheese is golden brown.
Or bake in your camp oven, and remember to put some coals on top to help brown the cheese.
