Easy & Quick Delicious Soups
We were at our favourite spot in the Flinders Ranges last year at Arkaba Station where we were joined by family & friends, so it was a good opportunity to try out some new soup recipes while there were a few mouths to feed.

The following were all a hit, with even those amongst the group who don’t particularly like soup hoeing in and even coming back for seconds.
I’m sure you’ll enjoy them. They are easy to make and will warm the cockles of your soul on a cold night out bush.

Sadly Arkaba station is now owned by Luxury Lodges of Australia and is a luxury and expensive homestead stay, so it is no longer available for people to drive the 4WD tracks or camp.

 

chicken noolde and corn soupChicken Noodle & Corn Soup
A delicious soup that doesn’t get much easier to make.

1 pkt chicken noodle soup
1 pkt cream of chicken soup
3 to 4 cups of water (depending on how thick you like your soup)
1 x 420g can of creamed corn
salt & pepper to taste
Combine packet soups with water, stir to blend, and then add corn and salt & pepper to taste. Heat through, then serve.




Creamy Yummy SoupCreamy Yummy Vegetable Soup
A full bodied, hearty soup. Served with some fresh crusty bread it is a meal on its own.

4 bacon rashers - finely chopped
2 potatoes - peeled and finely chopped
1 carrot - finely chopped
1 onion - finely chopped
1 tspn curry powder
2 x cans (425gm) cream of celery soup
1 x 300 gm can whole corn kernel - including liquid
3 cups milk
2 tblspns parsley - finely chopped
salt & pepper to taste
Brown bacon in a pan until lightly crisp. Remove. To the pan add the potatoes, carrot and onion and cooked until tender, but not browned. Add the curry powder and stir for a few mins. Add the cans of soup, corn, milk and parsley. Bring slowly to the boil, stirring constantly. Season to taste and add the bacon just before serving.
Hint: Brown sugar is an antidote for salt if stew or soup is too salty - add a teaspoon of brown sugar and the briny taste will disappear.
